Peanut Butter Green Apple Bars

Serves 6 (2 bars each)

Ingredients

Peanut Butter Base
  • 1 Tbsp. Carlson Cod Liver Oil, green apple
  • 2 Tbsp. of creamy peanut butter
  • ¼ cup of honey
  • ½ tsp. of ground cinnamon
  • ¼ tsp. of salt
Oat Mixture
  • ½ cup of old-fashioned oats
  • ½ cup of toasted rice cereal
  • ¼ cup of mixed chopped dried fruit (such as apple, apricot, cranberries)
  • 2 Tbsp. of chopped walnuts
  • 2 Tbsp. of roasted pumpkin seeds
  • 2 Tbsp. of mini chocolate chips

Directions

  1. Combine the ingredients for the peanut butter base; stir until smooth.
  2. Place oat mixture ingredients in a large bowl; stir.
  3. Pour peanut butter base over oat mixture; stir thoroughly.
  4. Transfer mixture to a silicone loaf pan or a parchment-lined loaf pan. Press down hard with the back of a spatula to firmly pack the mixture into the pan.
  5. Chill for at least 4 hours, then cut into 12 bars.
  6. Store bars in a sealed container in the refrigerator.
