Greek Style Personal Pizzas

Serves 2


Hummus Flatbreads
  • 1 tsp. of olive oil
  • 2 individual flatbreads (such as naan or pita bread)
  • salt and pepper
  • ¼ cup of diced cucumber
  • ¼ cup of halved grape tomatoes
  • ¼ cup of sliced Kalamata olives
  • ¼ cup of chopped yellow bell pepper
  • ¼ cup of crumbled feta cheese
  • 2 Tbsp. diced red onion, optional
  • sprigs of watercress or baby spinach


  1. Preheat oven to 400° F.
  2. Combine the hummus ingredients. Stir until blended.
  3. Place flatbreads on a baking sheet. Brush each one with olive oil, then sprinkle them with salt and pepper to taste.
  4. Bake flatbreads 5 to 7 minutes or until they are lightly toasted.
  5. Spread 2 tablespoons of the hummus mixture on each flatbread.
  6. Divide the toppings evenly between the two flatbreads.
