Creamy Orange Peanut Noodles

Ingredients

Dressing (makes 8 ounces)
  • 1 Tbsp. plus 1 tsp. of Carlson The Very Finest Fish Oil, orange
  • ¼ cup of creamy peanut butter
  • 4 oz. of silken or soft tofu
  • 2 Tbsp. of soy sauce
  • 2 Tbsp. of fresh orange juice
  • 1 Tbsp. of honey
  • 1 Tbsp. of rice wine vinegar
  • 2 tsp. of grated fresh ginger
  • ½ tsp. of sesame oil
  • Pinch of dried red pepper flakes
Noodles & Toppings
  • 8 oz. of cooked noodles (such as rice, udon, linguine, soba)
  • ¼ cup of chopped peanuts
  • 2 green onions, sliced diagonally
  • 1 Tbsp. of toasted sesame seeds
  • Orange wedges

Directions

  1. Place dressing ingredients in a blender container; blend until smooth.
  2. Divide noodles among 4 individual bowls.
  3. Drizzle noodles with the dressing; toss gently.
  4. Top each serving with scallions, peanuts, sesame seeds, and orange wedges.
Tip: Silken tofu is a versatile ingredient; try it blended into dips, sauces and dressings in place of dairy options such as sour cream.
