½ of an avocado, mashed

1 tsp. (1 Packet) of Carlson The Very Finest Fish Oil or Cod Liver Oil, lemon

1½ Tbsp. of red onion, minced

1 Tbsp. of grated parmesan cheese

¼ tsp. of salt

¾ cup of arugula
-
1 whole artichoke heart (from a can or jar), thinly sliced

2 slices of whole-grain bread, toasted
Directions
- Stir together mashed avocado; Carlson oil, onion, cheese, and salt in a medium bowl.
- Evenly divide the arugula and avocado on toasted bread slices; top with artichoke slices.
- Sprinkle with additional parmesan cheese and cracked black pepper, if desired.
