Italian-Style Avocado Toast

  • ½ of an avocado, mashed
  • 1 tsp. (1 Packet) of Carlson The Very Finest Fish Oil or Cod Liver Oil, lemon
  • 1½ Tbsp. of red onion, minced
  • 1 Tbsp. of grated parmesan cheese
  • ¼ tsp. of salt
  • ¾ cup of arugula
  • 1 whole artichoke heart (from a can or jar), thinly sliced
  • 2 slices of whole-grain bread, toasted


  1. Stir together mashed avocado; Carlson oil, onion, cheese, and salt in a medium bowl.
  2. Evenly divide the arugula and avocado on toasted bread slices; top with artichoke slices.
  3. Sprinkle with additional parmesan cheese and cracked black pepper, if desired.
