- ½ of an avocado, mashed
- 1 tsp. (1 Packet) of Carlson The Very Finest Fish Oil or Cod Liver Oil, lemon
- 1½ Tbsp. of red onion, minced
- 1 Tbsp. of grated parmesan cheese
- ¼ tsp. of salt
- ¾ cup of arugula
- 1 whole artichoke heart (from a can or jar), thinly sliced
- 2 slices of whole-grain bread, toasted
- Stir together mashed avocado; Carlson oil, onion, cheese, and salt in a medium bowl.
- Evenly divide the arugula and avocado on toasted bread slices; top with artichoke slices.
- Sprinkle with additional parmesan cheese and cracked black pepper, if desired.
